Hallo Mädels und Buben...
Ich hab seit ich wieder aus NY da bin gesucht wie ein Bekloppter, aber ich hab bisher nix gefunden...kennt jemand von Euch das Rezept für die Chipotle Wings? Ich hab bisher gerade mal den Blue-Cheese-Dip dazu gefunden...GöGa jammert mir schon die Ohren voll, sie will unbedingt diese Wings haben

Tried chipotle wings a la Tyler Florence. His recipe: 2 lbs wings, oiled and seasoned w/s&p, put on grill. Baste with sauce made of 2 chipotle peppers in adobo sauce, 1 stick of butter, and 1 T of white wine vinegar. My note: this needs to be run through food processor to make very well blended sauce. He used a bleu cheese sauce for a dip. As you can see I got lazy and used a good BC dressing. I also seasoned the wings with more than just S&P; I used Chef Han's cajun poultry seasoning. The butter will cause flare-ups if not careful.

Grilled Chicken Wings with Spicy Chipotle Hot Sauce and Blue Cheese-Yogurt Dipping
Ingredients
* 46 chicken wings
* Vegetable oil
* Salt and freshly ground pepper
* Chipotle Hot Sauce, recipe follows
* Blue Cheese-Yogurt Dip, recipe follows
Directions
Heat grill to high. Toss wings in a few tablespoons of oil and season with salt and pepper. Place on the grill in single layers and grill until golden brown on both sides and just cooked through, about 4 to 5 minutes per side.
Chipotle Hot Sauce:
1 1/2 cups red wine vinegar
3 tablespoons Dijon mustard
2 to 3 tablespoons chipotle pepper puree (depending on how spicy you like it)
3 tablespoons honey
3 tablespoons vegetable oil
Salt and freshly ground pepper
1 stick unsalted butter, cut into pieces
2 tablespoons ancho chile powder
Whisk together the vinegar, Dijon mustard, chipotle puree, honey, and oil in a medium bowl. Season with salt and pepper, to taste.
Melt butter in a large skillet or a large pot on the grates of the grill. Add the hot sauce mixture and bring to a boil. Whisk in the ancho chile powder and season with salt, to taste. Add the wings and cook, stirring, for 2 to 3 minutes. Serve with Blue Cheese-Yogurt Dip,
Blue Cheese-Yogurt Dip:
1 pint thick Greek yogurt
3/4 cup crumbled domestic blue cheese
2 tablespoons finely chopped red onion
3 tablespoons finely sliced scallions
Salt and freshly ground pepper
Combine all ingredients in a bowl and season with salt and pepper, to taste. Cover and refrigerate for at least 30 minutes before serving.

* Celery sticks
Combine all ingredients for dip in a small bowl and set aside. Remove chicken wing tips and discard; cut wings in half at joints. Heat 2 inches of oil in a deep-fryer to 375°F; fry chicken until crisp and golden brown, about 10 minutes. Drain well and place in a large shallow container.
Melt butter in a small saucepan; stir in TABASCO® Chipotle Sauce to taste and heat through. Drizzle over chicken wings and toss well. Serve warm with celery sticks and blue cheese dip.

Prepare the chipotle butter. Combine 1 stick of unsalted butter (melted, or at room temperature), 2 chipotles in adobo sauce (finely chopped), and 1 tablespoon white wine vinegar in a mixing bowl. Baste wings with chipotle butter as they are cooking on the grill. The wings should take about 20-25 minutes to cook.
While the chicken is cooking, prepare the honey blue cheese dip. In a bowl, combine 1 cup sour cream, 1 cup mayonnaise, 1 cup crumbled domestic blue cheese, 1/4 cup honey, 2 tablespoons chopped chives, juice of 1 lemon, and a dash of extra virgin olive oil. Season with salt and pepper, and stir everything well.
Remove wings from the grill and put them back into the chipotle butter bowl. Toss wings in the butter for a final coating of flavor. Serve wings with honey blue cheese dip and garnish with fresh cilantro leaves and lime wedges.

Ich hab's gemacht. - Vor ein paar Wochen schon. Muß mal nach dem Thread gucken, jedenfalls war mir das geteste Rezept zu essiglastig (im wesentlichen bin ich nach dem Zweiten gegangen).
Gerade gestern hab ich die Reste verbraten, die Sosse die ich noch hatte mit etwas Ketchup, Ahornsirup und Öl angereichert, dann gings, aber gut war's noch nicht.

Hab schonmal Wings gemacht, ja, allerdings war es zum Einen ein anderes Rezept, das aber nicht so der Hit war und dann war zu dem Zeitpunkt mein Kameraakku hinüber, daher auch leider keine Bilder. Aber ich habe mal geplant, dieses WE eines Deiner ausgesuchten Rezepte zu machen. Bilder kommen dann auf jeden Fall
