I have to wait 45 days for the next step , then another 45 days until it's complete .
Hopefully it'll be worth it.

Even if it tastes half as good as the limoncello i tasted in Peschici by Mama Leone, 180 days of waiting would be worth for it

Just hold on Smokemaster, my wife is italian, her aunt Irene makes lot Limoncello every year. I'll give her a call to ask her for the recipe and after that I'll post a "Descripton how it's made und function" here. Maybe there is one or another good advice for you.
If you have the chance to sacrifice a little bit of your Limoncello you shall try to make "Crema Limoncello". Thats Limoncello with Milk. I'll post the recipe, too. One of the best drinks I ever tasted. Really!
I think there will be round about 45 to 50% Alc. left after 90 days. Let us know how much it was exactely.
To the crema limoncello recipe: There will be something between 60% Acl. left..... but you can not smell or taste the alcohol. The crema is stored in the freezer but will not freeze, it's like a "slush ice" for all the time. Drink it as long as it's half frozen, when it's getting warm you taste pure alcohol. That burnes the throat away ;-)
